Where possible in this remote area we try to:
- Use locally sourced produce to cut down on food miles.
- Cook fresh & seasonally ñ this reduces processing, additives & cost.
- Be wary of the cheapest ñ it may be costing ìthe earthî.
- Avoid supermarkets ñ their ethics on many levels are poor.
- Support our local producers so we donít lose them.
- Buy in bulk to reduce packaging.
- Buy Organic when available ñ Soil Association standards.
- Choose Fair Trade products with unavoidable imported produce such as tea & coffee.
- Where we have a choice, choose the produce which has the highest level of animal welfare - RSPCA & Freedom Foods.
- Minimise waste with careful planning & composting.
Our local suppliers are:
R & C MacLennan ñ butchers Lochcarron - for bacon, home made venison sausages & Haggis. Venison is local & wild. Hams we cook & glaze.
West Highland Dairy - for yoghurt, Crowdie, Cheeses & CrËme Fraiche.
Loch Torridon Smokehouse Shieldaig - cold & hot smoked Salmon (sourced from Wester Ross Fisheries)
Wester Ross Fisheries - Ullapool. RSPCA Freedom Food for fresh sides & fillets of salmon.
Some salads & herbs we grow ourselves - organically.
Summer Soft Fruits we pick from fruit farms around Tore & grow a little of our own. These are frozen or jammed.
